Chicken in Pineapple Sauce
Pineapple fans should try this chicken hamonado dish. Pineapple is the main ingredient in this saucy dish and makes the chicken sweet, tender, and delicious. Beef can also be used to make hamonado, but this chicken version is my favorite!
INGREDIENT
3 kg (1.3 kg) pieces of chicken of your choice (thighs, drumsticks or wings)
2 tbsp (30 ml) fish sauce
1 tbsp (15 ml) lemon juice
1 teaspoon freshly ground black pepper, plus more to taste
2 tablespoons (30 ml) vegetable oil
4 cloves of garlic, chopped
1 small onion, chopped
1 cup (240 ml) unsweetened pineapple juice
2 tbsp (25 g) sugar
2 tbsp (30 ml) soy sauce
1 (398 ml) can be pineapple with juice
Salt to taste
White rice, to be served
PREPARATION
In a large bowl, combine the chicken pieces with fish sauce, lemon juice and pepper, stir to combine. Cover with plastic wrap and chill for at least one hour. Drain the chicken and remove the marinade.
Heat the oil in a Dutch oven or a heavy skillet over medium-high heat. Add garlic and onion, and saute until the onions begin to soften, about 2 minutes.
Add chicken and stir-fry until it is no longer pink, about 5 minutes.
Add pineapple juice, sugar, and soy sauce. Bring to a boil, reduce heat to medium and cook gently until chicken is almost tender, about 20 minutes.
Add the pineapple chunks to the juice and continue to simmer until the sauce is reduced and the chicken is tender, about 20 minutes. Season with salt.
Serve with white rice.
